Chocolate cake
List of ingredients (for 6 people) / In a cake dish 20 cm (7.8 inches long)
100g (1/4 lb) dark chocolate Kuruba (60% cocoa)
60g (4 ¼ Tablespoons) unsalted butter
6 egg yolks
140g (2/3 cup) castor sugar (superfine sugar)
100g or 10 cl (1/3 + ¼ c ) heavy or thickened cream
120g (1/2c + 1/3c) Pastry flour
25g (3 2/3 level tablespoons) cocoa powder
6g (1 packet) powdered yeast
Directions
Preheat the oven to 150ºC (300 F). Finely chop the dark chocolate. Melt the butter and keep it warm. In a large bowl, sift together the flour, cocoa powder and yeast. In a separate bowl, lightly whisk the egg yolks and sugar. Add the cream to the egg yolks and sugar, then blend together with a spatula, slowly adding the sifted mixture, melted butter and lastly the chopped chocolate. Lightly butter the cake dish and pour in the cake batter. Place in the oven and bake for 40 to 50 minutes. Remove from pan when warm.

You can add some pieces of walnuts, almonds or hazelnuts right before baking. Serve with caramel ice cream or crème de ganache.
