How is a glazed chestnut made?

After shelling, the chestnuts are cooked in water at least 100 ° C (to prevent bursting), for several hours.
Then the fruit is candied in a syrup solution of 60 to 75% sugar, glucose and vanilla. This operation lasts several days and in syrup solutions that are increasingly concentrated.
Finally, the chestnut is candied with a fine layer of sugar that allows the chestnut flavors to be revealed.

The chestnut of Turin has a slightly elongated shape, and when it is cracked in two, a drop of syrup will appear.
